Get it While You Still Can: Sherry Cask Finished Bourbon Whiskey from Still Austin Whiskey Co.

Get it while you l can! Still Austin Whiskey Co. still has a few bottles of their super limited edition Sherry Cask Finished Bourbon Whiskey remaining – don’t sleep on this!

If you’ve never heard of Still Austin, they’re the only grain-to-glass distillery in the city. They start with local Texas grains and from there, they do every part of the process – from milling and mashing, fermenting and distilling, to barreling and bottling.

Still is located at The Yard, so after visiting the distillery, you can walk to the Austin Winery, Spokesman Coffee Bar, or St. Elmo Brewing Co., depending on your preference.

I went to the release party for their Sherry Cask Finished Bourbon Whiskey back in November. They had some sweet swag bags to the first 50 people and the first 200 got to purchase one of the limited edition numbered bottles! Lead Distiller John Schrepel describes the bourbon as this:

“Although it was finished in a sherry cask, this bourbon still shines brightly. The sherry complements the bourbon extremely well, bringing sweetness and added spice, and one of the longest finishes I’ve tasted in a barrel-finished spirit.”

We picked up our swag bag (which had some glasses, a shaker, and a few other goodies) and purchased bottle #29. I’ve never had a limited edition numbered bottle before! I thought it was pretty cool. After getting our bottle, we hit the bar.

The bartenders at Still Austin were serving up some specialty cocktails (release day only) all made with the Sherry Cask Finished Bourbon – PX Manhattan, Sherry Finished Old Fashioned, Sherry Scofflaw, and Man O’ War. Brian went with the trusty Old Fashioned. I tried a Manhattan and was shocked by how much I liked it. It was SO good! I honestly just ordered it for photos (much different look than an old fashioned) but was pleasantly surprised.

Still Austin has a great little patio outside. We hung out at a picnic table, relaxed in the sun, and listened to live music. It was a great, fun event. Congrats, Still Austin! I can’t wait to see what this little Austin distillery cooks up in 2020.

If you’ve never been to Still Austin, they give tours with tastings! Book one on their website. Brian and I did a tour a while ago and it was a lot of fun. If you’re not interested in touring, you can sit at the bar or relax at the outdoor tables, and just enjoy their delicious, 100% Austin-made spirits!
